Ingredients

Dough Ingredients:
  • 120 g butter
  • 100 g margarine
  • 50 g powdered sugar
  • 1 g salt
  • 2 egg yolks
  • 25 g milk powder
  • 25 g cornstarch
  • 300 g medium-protein flour (all-purpose flour)
Filling:

Instructions

  1. Combine butter, margarine, powdered sugar, and salt in a bowl.
  2. Mix using a spatula or a mixer on low speed for about 1 minute until well combined (do not overmix or whip).
  3. Add the egg yolks and mix again until fully incorporated.
  4. Add milk powder, cornstarch, and flour.
  5. Mix gently until the dough is well combined.
  6. Take about 6 g of dough, flatten it, and fill with 4 g Croner Nastar Special.
  7. Shape into neat balls and place them on a baking tray.
  8. Bake in the oven at 130–140°C for 20 minutes.
  9. Remove from the oven and let cool slightly, then brush the tops evenly with egg yolk.
  10. Bake again at 130–140°C for 15–20 minutes until fully cooked and golden.
