Ingredients
Ingredient A:
- 200 g Glutinous Rice Flour
- 150 g Modified Starch
- 25 g Cocoa Powder
- 390 g Water
Ingredient B:
- 100 g Water
- 50 g Glucose
- 100 g Granulated Sugar
Filling:
- 25gr Butter
- 100gr Kunafa
- 100gr Innova Dipglaze Matcha
Instructions
Dough:
- Cook Ingredient B (water, glucose, and granulated sugar) in a saucepan over medium heat until the sugar dissolves and the mixture comes to a boil. Remove from heat and let it cool slightly until warm.
- In a large bowl, combine Ingredient A (glutinous rice flour, modified starch, cocoa powder, and water). Mix well until smooth and free of lumps.
- Pour the warm Ingredient B mixture into Ingredient A, then mix until a soft and elastic dough forms.
- Pour the dough into a tray that has been lightly greased with oil.
- Steam for about 25–30 minutes until the dough is cooked and becomes slightly transparent.
- Once cooked, remove the dough from the tray and stir or knead it with a spatula until smooth and chewy. Let it cool slightly.
Filling:
- Sauté the kunafa with butter until it turns golden yellow.
- Pour Innova DipGlaze Matcha into the kunafa and mix until evenly combined.
Finishing:
- Take a small portion of the dough and roll it into a ball.
- Fill the center with the kunafa mixture.
- Close and shape it neatly back into a ball.
- Dubai Chewy Cookie is ready to serve.
